The ham of Cinta Senese pigs is made exclusively from pure bred "Cinta Senese"slaughtered between 12 and 15 months. After trimming, the ham is salted onwooden boards, then desalted in a cold place to rest and peppery. Ripening takesplace on a typical wooden scaffolding.
