Specifications: The Pici are distant relatives of spaghetti. The tuscan word "appicciare" is often used in kitchens where it means making pici noodles that are a kind of yarns, is the right word, by hand. Towards the Montalcino area, however, are called pinci. The paste is the most poor can exist in culinary matters. Tradition has it that it made only water, flour and salt. With these ingredients must be prepare a hard enough paste. The eggs are rarely tolerated, and only for a flush. This paste has been feeding the poor for many generations who contented themselves season with very little oil and with chopped onion. Traditionally they served "garlic" or "the crumbs", which are the condiments that go for more. |
