To be called extra virgin olive oil must be part of different quality levels. The most important is the level of acidity (expressed as % oleoico acid that determines the content of free fatty acids in the oil). For a level less than or equal to 0.8 can be considered extra virgin olive oil, virgin olive oil from 0.8 to 2.0, greater than 2.0 striking oil is not suitable for human consumption except by chemical modification of acidity. |
